Carioca balls are Filipino dessert and perfect snacks with coffee or tea. These fried sticky rice treats are sweet crunchy outside and chewy yummy that you can't resist.
Ingredients
Rice Balls
4 cups Sweet rice flour
1 cup Coconut milk
2 cups Macapuno with syrup (Coconut strips with syrup that you can buy at Asian Store)
2-3 cups Vegetable oil
bamboo skewer (optional)
Coconut Syrup
1 cup Coconut milk
1 cup Brown Sugar
Instructions
In a bowl, combine sweet rice flour, macapuno and 1 cup of coconut milk. Mix together and make sure it's pliable dough. The dough should not be too dry and wet.
Scoop a one tablespoonful of dough and roll to make a ball. Poke a stick or toothpick in the middle so it won't puff when you fry it.
In a medium pan, heat about 3 inches deep oil. Gently add the balls into the oil and fry them until golden brown.
Coconut Syrup
In a sauce pan, combine coconut milk and brown sugar. Stir them until it's thick and golden brown.
